Pad See ew

ingredients:

Serves 4

  • 2 tbsp oil

  • 6-8 cloves garlic, minced

  • 4 eggs

  • 1 lb  meat of choice, thinly sliced

  • 6 stalks of Chinese broccoli, cut into 1–2” pieces

  • 24 oz flat, wide rice noodles, (peel off by layer)

  • 4 tsp black soy sauce

  • 2.5 tbsp sugar

  • 4 Tbsp oyster sauce

  • 2 Tbsp light soy sauce

  • 1 Tbsp Golden Mountain

  • 3 tsp fish sauce

  • Ground white pepper

  • 1/4 cup vinegar

  • 1 jalapeno sliced thin

Instructions:

  1. In a large wok, medium heat add oil. Add protein (if using) cook until 75% done. Add minced garlic mixture and stir until the small pieces of garlic start to turn light golden brown.

  2. Push protein and garlic to the side. Add egg (if using), break the yolk let it cook until halfway done, and start to scramble. Add Chinese broccoli and cook until wilted.

  3. Add noodles and black soy sauce, sugar, oyster sauce, soy, sauce golden mountain sauce, and fish sauce. Let the noodles sit in the pan and absorb the sauce, flipping it lightly without breaking the noodles.

  4. When the sauce is all absorbed, turn the heat off, and sprinkle with white pepper. Combine the vinegar and slice pepper in a small bowl add 1 tsp to your noodles and serve.

NOTE: Tofu and/or baby corn are great meat alternatives to this dish
