Drunken Noodles

ingredients:

  • 4 tbsp oil

  • 6-8 cloves garlic

  • 8 Thai chilis

  • 1.5 lbs meat of choice, thinly sliced

  • 1.5 lbs Chinese broccoli, cut into 1–2” pieces

  • 24 oz flat, wide rice noodles, (cut into 1" wide strips then peel off by layer)

  • 2 tsp black soy sauce

  • 1 tbsp sugar

  • 1/4 cup oyster sauce

  • 2 Tbsp light soy sauce

  • 1 Tbsp Golden Mountain

  • 2 tsp fish sauce

  • 1/2 cup holy basil leaves

Instructions:

  1. Put garlic and chilies into a mortar, and pound to a rough paste.

  2. In a large wok, medium heat add 4 tbsp oil. Add the chill/garlic mixture and stir until the small pieces of garlic start to turn light golden brown.

  3. Add protein, if using, and cook until halfway done. Add Chinese broccoli AND toss in the pan quickly to wilt.

  4. Add noodles and black soy sauce, sugar, oyster sauce, soy, sauce golden mountain sauce, and fish sauce. Let the noodles sit in the pan and absorb the sauce, flipping it lightly without breaking the noodles.

  5. When the sauce is all absorbed, turn the heat off, and add the basil and plate

NOTE: Tofu and/or baby corn are great meat alternatives to this dish
