Thai Style Yellow Curry

ingredients:

  • 1 tbsp oil

  • 3 heaping tbsp yellow curry paste

  • 2 lbs of meat if using chicken, pork, or beef (bite-sized cubes)

  • 2 large peeled russet potatoes cubed

  • 1 large white onion cubed

  • 2 cans coconut milk

  • 1/2 tbsp bouillon

  • 2 tbsp palm sugar

  • 2 tbsp fish sauce

  • 1/2 cup of water

Instructions:

  1. Heat A large pot on medium heat, AND fry the curry paste with oil until fragrant. Add meat (if using) cook 75% through.

  2. Add potato and onion. Quick stir then add coconut milk and bouillon.

  3. Once bubbling, add palm sugar, fish sauce, and water. Turn heat to medium-low cover and cook until potato is to desired doneness

  4. Taste it, add more fish sauce and/or sugar to your liking

  5. Serve with hot jasmine rice or paratha

NOTE: cauliflower is a great meat substitute for this dish, cut into large florets and add at the same time you would potato.
