Jajangmyeon

Ingredients:

About 4 servings

  • 1/2 lb any meat of choice (cut into cubes)

  • 1 cup of zucchini, cut into ½ inch cubes

  • 1 cup of potato, peeled and cut into ½ inch cubes

  • 1 cup of onion cut into 1/4in pieces

  • 3 tablespoons of vegetable oil

  • 4 tbsp of Black bean paste

  • 2 tablespoons potato starch combined with ¼ cup water and 1 teaspoon of sugar in a small bowl

  • 1 teaspoon of toasted sesame oil

  • ½ cup cucumber, cut into thin sticks for garnish

  • Jjajangmyeong noodles (about 24 oz) (boiled then and washed with cold water to remove excess starch) Choose whatever noodle is your favorite, thick udon, thinner wheat noodles, etc.

Instructions:

  • First cook bean paste and 2 tablespoons of oil until fragrant then set aside.

  • Sautéed the rest of THE oil with onions til soft then add the meat and the rest of the vegetables. Cook til everything is cooked 80%

  • add in the cooked bean paste and the starch water mixture.

  • Cook thOroughly and serve on top of noodles. Then topped with the cucumbers slices.
