Peanut Sauce

Ingredients:

  • 1/2 TBSP Oil

  • 1.5 TBSP Red Curry Paste

  • 1.5 cups Creamy Peanut Butter (unsalted, no additives)

  • 1 TBSP Salt

  • 3 TBSP Tamarind juice

  • 1 cup Palm Sugar

  • 1/3 cup Coconut Milk

  • 1 cup Water

Instructions:

  • In a small saucepot on medium heat, add oil and curry paste. Stir until fragrant for about 1 minute.

  • Add peanut butter, salt, tamarind paste, palm sugar, coconut milk, and water. Turn heat to medium-low and stir frequently.

  • Once all ingredients are well incorporated and mixed, taste and adjust according to liking. Turn off THE heat and set aside, cool and serve.
