Peanut Sauce
Ingredients:
1/2 TBSP Oil
1.5 TBSP Red Curry Paste
1.5 cups Creamy Peanut Butter (unsalted, no additives)
1 TBSP Salt
3 TBSP Tamarind juice
1 cup Palm Sugar
1/3 cup Coconut Milk
1 cup Water
Instructions:
In a small saucepot on medium heat, add oil and curry paste. Stir until fragrant for about 1 minute.
Add peanut butter, salt, tamarind paste, palm sugar, coconut milk, and water. Turn heat to medium-low and stir frequently.
Once all ingredients are well incorporated and mixed, taste and adjust according to liking. Turn off THE heat and set aside, cool and serve.
