Thai Style Fried Rice

Ingredients:

2 big servings

  • 3 cups cooked and cooled jasmine rice (day old is even better)

  • 1 Tablespoon fish sauce

  • 1 Tablespoon thin/light soy sauce

  • 1 tsp white sugar

  • dash of ground white pepper

  • 1 cup full of whatever vegetables you want to add

  • 2 tsp oil of choice

  • 2 cloves garlic chopped

  • 2 eggs

  • 3 Tablespoons green onions chopped

  • lime wedge and cilantro

Instructions:

  • In a bowl, add rice, fish sauce, thin soy sauce, sugar, and white pepper mix well (use your hands, but don’t crumple or squeeze!)

  • In a pan add 1 tsp oil and garlic cook for 30 seconds, add vegetables of choice, and cook until vegeTAbles are 85% done.

  • Push vegetables to the side, add remaining oil turn to heat middle, add egg, and soft scramble.

  • Add seasoned rice and mix everything together. Taste. Add more soy sauce if needed.

  • add green onions mix well again, and serve with a lime wedge and cilantro.
