Green Tea Soba Salad

Ingredients:

Serves 2

For sauce:

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp rice vinegar

  • 1 tbsp lime juice

  • 1 tbsp Japanese noodle soup base (can leave out and substitute with more soy sauce)

  • 1 tsp honey

  • 1 tsp grated ginger

  • 1 tbsp chili garlic sauce (or sambal)

For salad:

  • Green tea soba noodles (1 bundle per serving)

  • Green onions

  • thin sliced cold cucumber

  • sesame seeds

  • Furikake

  • Togarashi

For salmon (if adding):

  • 5-7 oz piece of salmon

  • 1 tbsp mirin

  • 1 tbsp soy sauce

  • 1/2 tbsp sesame oil

  • small pinch of sesame seeds

Instructions:

Sauce: mix everything in the bowl, taste, add more of any flavor you might be missing and set aside.

Salmon: marinade salmon for at least 10 minutes, and cook in oven or air fryer until desired doneness.

Salad:

  1. Cook noodles to package instructions. Rinse under very cold water until THE noodle feels cold and add to the prepared sauce.

  2. Add cucumber, half of the sesame seeds, and green onions you want. Add in protein (Salmon as seen in THE picture above, shredded rotisserie chicken, or fried tofu) if using.

  3. Plate and top with togarashi, furikake, and remainder of seeds and green onions.

  4. Serve cold!
