Laab
Ingredients:
6 Tbsp water
¾ tbsp. bouillon
1 lb ground meat, or whole shrimp, or mushroom
3 1-inch pieces of lemongrass - bruised
2 1/2 Tbsp fish sauce
2 shallots, thinly sliced
4 Tbsp lime juice
½ tbsp Roasted chili powder
2 Tbsp toasted rice powder
½ cup chopped leaves saw tooth coriander
¼ cup chopped cilantro
¼ cup chopped green onion
½ cup mint leaves, roughly torn
Instructions:
In a pot, add water, bouillon, AND lemongrass (you can add some torn leaves of kaffir in here as well, if you have it!) bring to a simmer, and Add ground meat and half of the fish sauce, then cook, stirring constantly breaking up meat, until fully cooked.
Remove from heat, then add the shallots, the remaining fish sauce, lime juice, chili flakes, and toasted rice powder; stir to mix well.
Taste! Add more chili flakes, lime juice, or fish sauce as you see fit!
Top with coriander, cilantro green onions, and mint stir to mix.
Serve with sticky rice!
