Laab

Ingredients:

  • 6 Tbsp water

  • ¾  tbsp. bouillon

  • 1 lb ground meat, or whole shrimp, or mushroom

  • 3 1-inch pieces of lemongrass - bruised

  • 2 1/2 Tbsp fish sauce

  • 2 shallots, thinly sliced

  • 4 Tbsp lime juice

  • ½ tbsp Roasted chili powder

  • 2 Tbsp toasted rice powder

  • ½ cup chopped leaves saw tooth coriander

  • ¼ cup chopped cilantro

  • ¼ cup chopped green onion

  • ½  cup mint leaves, roughly torn

Instructions:

  • In a pot, add water, bouillon, AND lemongrass (you can add some torn leaves of kaffir in here as well, if you have it!) bring to a simmer, and Add ground meat and half of the fish sauce, then cook, stirring constantly breaking up meat, until fully cooked.

  • Remove from heat, then add the shallots, the remaining fish sauce, lime juice, chili flakes, and toasted rice powder; stir to mix well.

  • Taste! Add more chili flakes, lime juice, or fish sauce as you see fit!

  • Top with coriander, cilantro green onions, and mint stir to mix.

  • Serve with sticky rice!
