Shrimp Shumai

Ingredients:

  • 1 lb whole peeled, tail off, raw shrimp

  • 1/2 tsp sesame oil

  • 1 tsp salt

  • a pinch of sugar

  • 1/4 cup finely-ish chopped water chestnuts

  • 1/2 tsp white pepper

  • 3/4 tbsp tapioca starch

Instructions:

  • Puree one half of the shrimp, while roughly chopping the other half. 

  • Mix all ingredients together well, it should be a slightly sticky mixture. 

  • To taste, take a tiny piece and put it into the microwave to quickly cook—this trick is strictly to taste and NOT to be used to cook your filling! After tasting, adjust salt, pepper, and other flavors accordingly. 

  • Add to your dumpling wrapper, roll to use the desireD shape, and steam for 4-7 mins,  until dough and filling are cooked.

  • Served with crunchy garlic and your favorite sauce!
